Marmalade aux Tomate Vert



Ingredients:

9 cups green tomatoes chopped
5 ½ cups sugar
2 lemons zested and juice
1/3 cup candied ginger chopped

Method:

·    Place the tomatoes in a food processor and gently pulse
·    Add sugar, stir well and let stand over night in the fridge
·    Bring to a boil and simmer uncovered for 30 minutes
·    Add lemon zest, juice and chopped ginger
·    Bring to a rolling boil and cook uncovered until thick, about 15 minutes
·    Pour into hot sterilized jars, loosely seal and cool
·    Once fully cooled seal jars tightly and store in a cool place for up to three months
