Ketchup Vert



Ingredients:

11 pnts green tomatoes
10 onions
½ cup kosher salt
water
white wine or rice vinegar
½ cup of ketchup spices
6 cups sugar
2 cups brown sugar

Method:

·    Roughly cut tomatoes and onions, cover with salt and refrigerate over night
·    In a large stock pot add tomatoes, onions and cover with water and vinegar equal to the tomatoes bring to a boil and add the ketchup spices that are in cheese cloth, and both sugars
·    Continue cooking further for 2½ to 3 hours
·    Let cool and place in mason jars well sealed
