Ketchup Rouge



Ingredients:

11 quarts plum tomatoes peeled and diced
8 to 10 onions diced
1 whole celery fine diced
½ cup salt
equal parts Vinegar to tomatoes

       ~sachet~
½ cup marinade spice
1 tsp red pepper flakes
1 tsp cracked red pepper

Method:

·    Blanch and peel tomatoes in salt water, once peeled cut into 1/4
·    Fine dice onions and celery and add to a large sauce pot
·    Add salt, vinegar, sachet and simmer on medium-low heat for 1 ½ hours to 3 hours
·    Add 6 cups of sugar, one cup at a time string continuously to desolve sugar
·    Reduce heat to low and cook for one more hour
·    Let cool, remove sachet and poor into mason jars and seal well

You can add apples to this recipe if you have some
Just peel and dice
