Bread and Butter Pickles

 
Ingredients:

12 cucumbers cut into ¼ wedges or slices
6 onions cut into slices
½ cup kosher salt
ice water to cover

4 cups sugar
2 tsp fresh ginger peeled and sliced thin
2 tsp tumeric
2 tsp cracked black pepper
2 tsp corn starch
4 tsp mustard seeds
4 cups vinegar

Method:
·    Wash cucumbers well before cutting into ¼ wedges
·    Cut onions into slices
·    In a large container add cucumbers, onions salt and ice water and let rest in a cold place for 2 hours
·    after the two hours remove the cucumbers from the brine and taste for consistency of salt, if its needs more time leave it in the brine a little longer then place in mason jars with onions
·    in a large sauce pot bring to a boil sugar, ginger, tumeric
·    cracked black pepper, corn starch, mustard seeds and vinegar
·    once boiling poor over cucumbers and seal jars with lids but not too tight, and let cool naturally
