Sauce aux Tomate



Ingredients:

2 tbsp Oil
1 large onion fine diced
8 cloves garlic thinly sliced
2 28oz cans of whole plum tomatoes
1 5.5oz can of tomato paste
1 bunch picked basil
salt to taste
pepper to taste

Method:

·    In a large sauce pot sweat onion and garlic together and making sure to not colour, season well
·    In a blender or with an emurtion blender puree the whole plum tomatoes and add to the onions and garlic with the tomato paste
·    Stir well bring to a fast boil then reduce heat to low and simmer for maximum one hour
·    Meanwhile remove the leaves of basil from the stems, washing very well
·    Remove sauce from the heat stir in the fresh basil leaves
·    Adjust seasoning to the sauce if needed
·    Pour into hot sterilized mason jars, sealing and placing them on their lids to cool down
·    Once cool your sauce can be stored in a cool area for up to one month
