Gateau aux Carottes


Ingredients:

2 cups flour
2 cups sugar
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
1 tsp vanilla extract
1 cup canola oil
2 cups carrots grated
1 cup walnuts or shredded coconut
4 eggs whole
 
Method:

·    Sift together all dry ingredients
·    Mix in eggs one at a time and add oil and vanilla
·    Fold in carrots and nuts making sure to not over mix
·    Bake at 350f for 45 minute to one hour (or until a toothpick comes out clean) in a greased 10” fluted springform pan or 10” fluted bundt pan
·    let cool completely before icing with (see recipe for “glacage aux fromage en crème”)
