Blueberry Oatmeal Muffins



Ingredients:

2/3 cup rolled oats (not instant)
1 cup whole wheat flour
¾ cup unbleached flour
1 tsp baking powder
¼ tsp nutmeg
1 tsp cinnamon
1 large egg beaten
1 cup milk
2 tbsp butter
2 tbsp honey
1 cup blueberries

Method:
·    In a large mixing bowl, mix together all dry ingredients
·    In a separate bowl whisk together the egg, milk, butter and honey. Stir in blueberries
·    Pour the wet ingredients into the dry ingredients all at once and fold in until the dry ingredients are just moistened
·    Spoon the batter into grease muffin tins and bake for 20 minutes at 400f or until lightly browned
