Oatmeal Jam Drops


Ingredients:

2/3 cup soft margarine
¾ cup brown sugar firmly packed
1 eggs beaten
1 tsp vanilla extract
2 tsp vinegar
½ tsp baking soda
1 tsp cinnamon
½ tsp salt
1 1/3 cup flour
1½ cups quick rolled oats
thick jam or marmalade

Method:

·    In a mixing bowl cream together margarine, brown sugar, egg, vanilla, and vanilla
·    Sift together baking soda, cinnamon, salt, flour and rolled oats, then stir into the creamed mixture
·    On a lined baking sheet drop batter into 1¼ inch mounds leaving 1½ inches around for expansion
·    Depress the center with your thumb (to prevent the batter sticking to your thumb, wet it first with cold water) and fill with the thick jam or marmalade
·    Bake at 350f for 10 to 12 minutes or until golden brown
