Conserve de Rhubarbe


Ingredients:

14 cups rhubarb chopped
3 cups raisins
7 cups sugar
2 oranges juiced
the rind of 2 oranges thinly sliced
½ cup walnuts chopped

Method:

·    In a large sauce pot combine rhubarb, raisins, sugar, orange juice and rind and let stand for 30 minutes
·    Bring to a boil uncovered for 40 minutes, stirring frequently
·    Add walnuts and continue to simmer until jam like
·    Pour into hot sterilized jars
·    Cool slightly and seal
